Cool as a Cucumber (Dip)

Let’s face it, the most amazing foods in life are the ones intended for dipping….

Need we run through the list?

  • Apple slices dipped in caramel
  • French fries dipped in catsup
  • Celery sticks dipped in peanut butter
  • Buffalo wings dipped in blue cheese (I wasn’t always a vegetarian, people)
  • Hummus dipped in pita
  • Strawberries dipped in chocolate
  • My spoon Anything dipped in Nutella

You get the idea – skinny dipping is amazing.

That is why I can’t collect enough great dip recipes. They are incredibly useful for parties, spontaneous hosting (“Oh, you want to pop by tonight?” — Am I the only one with family in D.C.??!!??) and even relaxed weeknight dinners.

This yogurt, cucumber and mint dip is pretty much the answer to everything. It is excellent paired with veggies and pita, or drizzled over salads, veggie burgers and various fritters (like these zucchini fritters!). Or, if you’re like me, you can eat it right off the spoon…(Yeah, not proud…)


  • 1 small cucumber, peeled and roughly chopped
  • 2 cups of plain Greek yogurt (I used non-fat and it worked just fine!)
  • Handful of mint, chopped
  • 1/2 lemon, juiced
  •  Salt and pepper to taste


  • Chop the cucumber and then put in food processor – Blend until pureed. Add in the yogurt, mint and salt and pepper – Blend again.
  • Squeeze in the juice of one lemon – blend; add salt and pepper to taste.

Easy as pie, right?
